3. They can interfere with vitamin absorption
You may not know that some nutrient-rich legumes, such as soybeans, contain substances that can interfere with the absorption of beta carotene and vitamins B12 and D. Through heating during the cooking process, these substances become inactive, thus blocking the absorption of nutrients from other vegetables and fruits. Therefore, excessive intake of beans is counterproductive and should be avoided.
