Caffeine: Friend or Foe?
What Influence Caffeine Content?
Naturally occurring caffeine may be influenced by:
- farming practices, such as plant types, climate, geographic location, etc.
- brewing method: long brewing time, high brewing temperature, and a large amount of brewing material yield drinks high in caffeine
Caffeine content in tea is influenced by fermentation:
- fully fermented (black tea) < semi-fermented (oolong tea) < non-fermented and lightly fermented (white tea, green, and yellow tea)
Caffeine content in tea is influenced by:
- roasting: Though the effect is little, dark roasting produces coffee beans with more caffeine content than light roasting.
- grind: More finely ground coffee releases more caffeine in water or evaporates because it has a larger surface area than its coarsely ground counterpart.
