Can You Eat Sprouted Potatoes?

The concern with eating sprouted potatoes lies in glycoalkaloids (GAs), a natural toxin secreted by the potato plants to protect themselves from insects and disease. Symptoms usually occur 8 - 12 hours after consumption of certain amount of GAs, though some may occur as early as after 0.5 hours. Common symptoms of GA poisoning include headaches, dizziness, abdominal pain, nausea, vomiting, diarrhea, etc. Some people may also experience drowsiness, mental confusion, rambling.

So don't eat sprouted potatoes?
