Medium-rare is the most-requested doneness at plenty of restaurants and bone-in filet is often thought to be the most suitable for medium rare. For medium-rare, aim for an internal temperature of around 130 degrees. An 1-inch thick steak should take about 7 minutes of cooking on each side. Let the meat rest for about 10 minutes before serving. Stick with leaner cuts if you like your steak cooked medium-rare and prepare a hanger or strip steak.
