Cranberry sweet potato casserole with candied pecan
- Combine and roast the following (except for pecans) in the oven at 400°F for 40 minutes, garnish with a layer of candied pecans before serving
- 3 large sweet potato, cubed
- 4 tbsp oil
- 1/3 cup fresh/frozen cranberries
- 1 cup candied pecans
Cranberry salad (inspired by Cooking Channel)
Combine the following ingredients:
- 6 oz fresh cranberries, finely chopped or pulsed in a food processor
- 1/2 cup sugar
- 1 cup miniature marshmallows
- 10 oz fruit of your choice
- 1 tsp vanilla extract
- 2/3 cup whipped heavy cream
