Cranberry sweet potato casserole with candied pecan

  • Combine and roast the following (except for pecans) in the oven at 400°F for 40 minutes, garnish with a layer of candied pecans before serving
  • 3 large sweet potato, cubed
  • 4 tbsp oil
  • 1/3 cup fresh/frozen cranberries
  • 1 cup candied pecans

Cranberry salad (inspired by Cooking Channel)

Combine the following ingredients:

  • 6 oz fresh cranberries, finely chopped or pulsed in a food processor
  • 1/2 cup sugar
  • 1 cup miniature marshmallows
  • 10 oz fruit of your choice
  • 1 tsp vanilla extract
  • 2/3 cup whipped heavy cream
