Are Green Potatoes Safe To Eat?
Does peeling or boiling green potatoes help?
As solanine is generally rooted in the skin of potatoes, peeling does help reduce its levels. Nevertheless, there're still up to 70% of the toxin in the flesh, unable to be removed even through boiling. Accordingly, you may still eat the potatoes with a few small green spots once you peel them and remove the spots. However, if the potato is more completely green and tastes bitter (another sign of solanine), toss them out right away!
