How to prevent potatoes from turning green?
Potatoes that contain toxic levels of solanine won't usually make it to the grocery stores. Unfortunately, the toxin can still be produced once delivered or stored in the kitchen without being handled properly. Thus, green potatoes need to be taken seriously from delivery to storage. Be careful to inspect potatoes before purchasing, and select those without damaged parts and green spots. At home, be sure to store them in cool and dark places, or keep them in an opaque sack to block out the light.
