Once thought of as drink for the coal miners and farmers of the southern Japan. In recent years this drink has become more popular than sake in Japan. Shochu is a reflection of the grain or starch it is made from and the koji, a mold that is responsible for the conversion of starch to sugar. We cannot have Shochu without this magical koji.
